Banana Cake & Couscous Salad

Impromptu baking today for a pot luck lunch tomorrow at church.  So, browning bananas and baking essentials came into play.

Banana cake with cinnamon
Recipe from Nigella 

  • 250ml plain/cake flour
  • 2tsp(10ml) baking powder
  • 1tsp(5ml) bicarbonate of soda
  • 125ml(1/2cup) vegetable oil
  • 125ml(1/2cup) brown sugar
  • 1tsp(5ml) cinnamon
  • 1tsp(5ml) vanilla essence 3
  • -4 mashed ripe bananas
  • 2 eggs

METHOD

Serves: about 8-10 people.
  1. Preheat oven to 180 degrees celsius and grease a loaf or ring cake tin.
  2. In a bowl beat eggs, oil, vanilla essence and brown sugar together.
  3. Sift in all the dry ingredients. Add mashed bananas and mix well. Pour batter into prepared tin and bake for about 20-25 minutes.
  4. Remove from oven and cool for 10 minutes before turning cake out on a wire rack. Sift icing sugar on top and serve.
Ganache icing 
200g Dark chocolate, chopped.
½ Cream
Place the chocolate into a saucepan. Add the half cup of cream
Stir over low heat until it’s smooth then remove from heat and cool before using.

Couscous salad
1 1/2 cups of couscous
10 Portobello mushrooms
2 yellow capsicums
1 large carrot
2 onions chopped finely
1 eggplant
Handful of chopped coriander (cilantro)

Couscous
Place the couscous in a saucepan with 2 cups of hot water poured over top, bring
the water to a boil – once it is boiling turn off and cover.
Allow the couscous to sit for 5 minutes.
Uncover and fluff up with a fork – the grains of couscous will have absorbed the liquid without becoming mushy.

Vegetables
Slide up the capsicums into long thin pieces
Peel the eggplant and slice long ways, then slice into evenly sized cubes
Peel the carrot and slice into long thing pieces
Wash the mushrooms throughly and slide into long thin slices
Heat a frying pan on the stove and add a tablespoon of olive oil once the pan is hot
Place the eggplant into the saucepan and cook until its slightly brown and soft
Add the rest of the vegetables and cook until soft
Chop up a handful of fresh coriander and place into the pan
Stir and take off heat.
Combine the cooked couscous with the vegetables
